As the holiday season comes to an end and winter officially sets in . . .
Baby, it’s cold outside!
I must have heard that song a million times over the past few months, but ain’t it the truth?!? Cold days and nights make me crave only one thing . . .
SOUP!
Sure, the canned stuff can suffice a craving, but it’s so easy to make! Here’s one of my favorite tortellini soup recipes.
Ground Turkey Tortellini Soup Recipe

Ground Turkey Tortellini Soup

Baby Spinach, Diced Onion, Minced Garlic, Red Pepper Flakes, Chicken Broth, Ground Turkey, Packaged Cheese Tortellini, & Canned Diced Tomatoes.
Ground Turkey Tortellini Soup Ingredients
- 1 Package cheese tortellini
- 1/2 lb. Ground turkey
- 1 Small yellow onion, diced
- 2 Garlic cloves, minced
- 1 tsp Red pepper flakes
- 1 20 oz Can diced tomatoes, with juice
- 2 Handfuls of fresh baby spinach (1/2 frozen package, defroster, water removed)
- 4 Cups chicken stock
- 1 Cup water
- Salt and pepper

In a large stockpot, saute ground turkey on medium heat. Season with salt and pepper. Add onions, garlic, and red pepper flakes and continue cooking.

Sprinkle with salt and pepper and continue sauteing until onions are translucent.

Add canned tomatoes and broth. Sprinkle with salt and pepper again, and stir to combine.

Add spinach and cheese tortellini to pot and stir. Soup will be done once tortellini have cooked through and float to the top.

Serve, topped with parmesan cheese and a hunk of crusty bread.
