Thai Green Curry Soup That Anyone Can Make

Broccoli is probably my favourite vegetable. Yum
But it does get a bit boring just eating it steamed all the time so I’ve been looking for some ways to spice it up.
Not only does this recipe for green curry broccoli soup sound delicious but it looked like even someone who hates to cook could make it
I was even able to change the recipe a little to make it suit my tastes…
Ingredients are:
Thai Green Curry Paste
Coconut Cream
Peanut Butter (I’m a crunchy girl)
I added a shallot because I love them
And of course some broccoli!
Thai Green Curry Soup Recipe:
I chopped the shallot roughly:
Added 2 tbsps of the coconut cream and the chopped shallot to a pan and cooked it for a bit:
I then added 3 tablespoons of green curry paste (in future I will only add 2 as it was a tad spicy for me):
This cooked for a minute or two. I then transferred the mixture to a saucepan and added 2 cups of water to the mix:
Once the mixture was boiling I added the broccoli in to cook for a few minutes:
I don’t mind a bit of crunch to my broccoli so I probably only simmered it for about 5 minutes.
Then all I did was remove the saucepan from the heat, stirred in a few tbsps of peanut butter and served!
It was very tasty.
Making soup and using curry paste is a great way to eat more vegies instead of steaming so i’ll be doing more of this in the future.

Such a good idea too. You could basically make any kind of vegie or meat soup and by adding green curry or red curry paste make it yum
