Casey’s Cream Of Garlic Soup Recipe

Garlic. Yuuuummm
Garlic is one of my all time favourite foods (even above cupcakes! whoa :p ).
So of course being the lazy cook that I am when I came across Cream of Garlic Soup I had to try it.
You need:
- 2 tbsp oil
- 2 oz diced bacon (I was feeling decadent so used smoked streaky bacon)
- 1 medium onion, sliced
- 3 cups chicken broth (I used chicken stock as I’m not exactly sure what the difference is and I couldn’t be bothered finding out)
- 8 cloves garlic
- 2 potatoes
- Parsley

Saute the onion and bacon in the oil until translucent.

Cooked bacon and onions.

Add the stock/broth and bring to a boil.

Next in is the potatoes and the garlic. Cover and simmer for 40 minutes.

Puree it all up and serve with chopped parsley.
While I enjoyed this Cream of Garlic soup recipe it really wasn’t garlicky enough for me. I have since found this recipe for garlic soup which I think is more to my taste. (25 cloves!).
