I could hardly wait for Emma to begin her culinary exploration! Once she turned 6 month old, I consulted with our pediatrician and got the green light to start her on solids. But, like her brother Charlie, she had little interest in the bland, boring flavors of rice cereal and oatmeal. Let the love affair with my handheld immersion blender continue!

Emma’s Roasted Yams, Apples, & Frozen Corn

Peel yams and apples, and cut into large chunks.

Place on a parchment paper lined baking sheet.

Lightly drizzle yams with EVOO, salt, pepper, and garlic powder. Lightly drizzle apples with EVOO, salt, pepper, and cinnamon.

Roast in a 375 degree oven for 30 minutes or until cooked through.

Boil frozen corn until cooked through, about 10 minutes, and drain.

Blend roasted yams, apples, and boiled corn with a handheld immersion blender, adding water until you reach desired consistency.

Let cool; I recommend storing in Infantino Squeeze Packages. BEST STORAGE SYSTEM EVER!

Emma’s Frozen Corn, Peas, & Quinoa

Prepare quinoa according to package directions. Let cool.

Boil frozen corn and peas until cooked through, about 10 minutes, and drain.

Blend quinoa, boiled corn, and peas with a handheld immersion blender, adding water until you reach desired consistency.

Let cool; I recommend storing in Squeeze Packages.

Roasted Blueberries, Banana, and Whole Grain Oatmeal Cereal

Place banana and blueberries on a parchment paper lined baking sheet. Lightly drizzle blueberries with EVOO, salt, pepper, and cinnamon.

Roast in a 375 degree oven for 15-20 minutes or until cooked through.

Blend roasted bananas, blueberries, and whole grain oatmeal cereal (it’s in a powder form) with a handheld immersion blender, adding water until you reach desired consistency.

Let cool; I recommend storing in Squeeze Packages. (Did I mention I love these things!!)

Peel butternut squash and apples, and cut into large chunks. Place on a parchment paper lined baking sheet.

Spinach & Roasted Sweet Potatoes

Peel sweet potato and cut into large chunks. Place on a parchment paper lined baking sheet.

Lightly drizzle sweet potato with EVOO, salt, pepper, and garlic powder. Roast in a 375 degree oven for 30 minutes or until cooked through.

Blanch spinach and drain.

Blend roasted sweet potatoes and blanched spinach with a handheld immersion blender, adding water until you reach desired consistency. Let cool and store.

Peel apple and cut into large chunks. Place on a parchment paper lined baking sheet.

Lightly drizzle apple with EVOO, salt, pepper, and cinnamon. Roast in a 375 degree oven for 30 minutes or until cooked through.

Boil carrots until soft and drain. Blend roasted apples and boiled carrots with a handheld immersion blender, adding water until you reach desired consistency. Let cool and store.
